Love seeing more and more vegans taking up blogging. Please welcome our newest Guest Blogger – Kirstiie, writer of House of Vegan. If you like cake, you’ll like this recipe.

Heck – if you don’t like cake, you’ll like this recipe! I never before enjoyed chocolate cakes and the like. But using natural, no-additives cocoa powder (dairy-free), it creates a more natural flavour.

This cake does come with a warning however, it is extremely addictive! 😉

**Easy recipe alert!**

* 3 x cups of Flour (I used Diabetics flour as it has less sugar etc).
* 2 x cups sugar (brown preferred, but you can use white).
* 6 x teaspoons of Natural cocoa powder (dairy-free)
* 2 x teaspoons of Baking Soda
* 1 x teaspoon of salt
* 2 x Cups of water
* 3/4 cups of Vegetable Oil (I used Canola Oil)
* 2 x tablespoons of Vinegar
* 2 x Teaspoons of Vanilla (I used 3)

* Preheat oven to 350 degrees F, or 180 degrees C or Gas mark 4.
* Thoroughly mix dry ingredients from above list first (flour, sugar, cocoa powder, baking soda and salt).
* Mix in wet ingredients (water, vegetable oil, vinegar, and vanilla) (I used powdered vanilla here instead of vanilla essence).
* Continue mixing until even and no lumps.
* Pour into cake pan and bake for approximately 40 minutes.
You can top the cake however you wish, but I recommend vegan vanilla butter cream frosting: vegan margarine (dairy-free/vegetable oil margarine), icing sugar and vanilla paste or extract!.

You can also do a chocolate frosting version with cocoa powder, or even peanut butter! Depends how sickly you want to GO! 😉
