Guest Blogger: Red Glitterx – Decadent Triple Chocolate Cake (Vegan)

All you need is love. But a little chocolate now and then doesn’t hurt.

This is a recipe for a basic chocolate cake, which can be eaten on its own, or decorated and iced/frosted for something extra special.

Included in this post, cake recipe, ganache, chocolate buttercream.

All ingredients vegan

Cake Recipe

1 1/2 cups of Self-Raising flour (if you don’t have self-raising flour, recipe below)

1/4 cup of cocoa powder

1 cup brown sugar

1 teaspoon vanilla extract

1/4 cup light oil (oil of your choice, eg sunflower, macadamia)

1 cup of water


1. Preheat oven to 160°C / 320°F.

Line with baking paper and grease a cake baking tray. If you add flour to stop batter sticking, use cocoa to stop white marks appearing on the cake when it’s cooked

2. Sift together flour and cocoa, into a large mixing bowl. Add sugar mix well.

3. Add vanilla extract and oil.

4. Add most of the water (it is better to reserve some water, than add it all in one go; as it is easier to add more water if the mixture is too dry than add more flour if the mixture is too liquid).

5. Mix by hand, 4-5 minutes (or with electric mixer), until the mixture is a velvety smooth batter.

6. Pour into prepared baking tray, tap the sides with a wooden spoon to make an air bubbles come to the top.

Bake 40-50 minutes or until a wooden skewer comes out clean. (I like to spin my cakes around half way through baking, to ensure that it cooks evenly from all sides, particularly important for fan-forced ovens).

7. Cool in tray for 5 minutes, then remove and transfer to a wire rack to cool completely before adding ganache and / or chocolate butter cream.

Can be eaten on its own, or smothered in ganache or chocolate butter cream, or sandwiched with buttercream and smothered with ganache for a triple chocolate cake

* Tip
Wait for cake to cool completely before removing greased baking paper.

Chocolate is the first luxury. It has so many things wrapped up in it: Deliciousness in the moment, childhood memories, and that grin-inducing feeling of getting a reward for being good.

100 – 150 grams of vegan chocolate (such as a block or choc-dots)

1 tablespoon vegan margarine

1. Melt the chocolate in a microwave (in 10 second bursts) or in bowl over a saucepan of simmering water (double-boiler) ensure no water gets in the melted chocolate, stir until melted.

2. Add margarine, mix.

3. Spread over cake as an icing / frosting.

Chocolate Butter Cream

1/2 cup of icing mixture or icing sugar (powdered sugar)
(icing mixture is icing sugar with corn flour, icing sugar is very fine sugar)

1 tablespoon cocoa

1 tablespoon vegan margarine (approx)

1. Mix the cocoa and the sugar, til blended, add enough margarine til mixture is spreadable.

2. Adjust the quantities to taste or til desired consistency.

3. Spread over cake instead of ganache or as a filling.

Optional extra

Top cake with well-crushed chocolate biscuits, sliced strawberries, or a light dusting of powdered sugar. Chocolate scrolls are created by running a vegetable/potato peeler along the edge of a block of chocolate as if shaving it.

Note: although definition of 1 Cup varies in different countries, all measurements in the cake are based on cups (except vanilla), rather than switching between cups and grams

Self-raising flour

For every 1 cup (100 g) flour of flour add the following:
1 and 1/2 teaspoon (3 g) baking powder
a pinch to ½ teaspoon (1 g or less) salt
